Summer time calls for easy relaxing evenings. Here is a great simple salad to enjoy this week-end.
1/4 cup Cilantro
1 Cucumber (I buy English cucumbers)
1 Lemon (about 2 tbsp), Juice of medium lemon
1/2 Red or Vadalia onion, medium
1 lb Roma tomatoes (prefer organic)
Baking & Spices
1/8 tsp Black pepper
1 tsp Sea salt or pink salt
Oils & Vinegars
2 tbsp Olive oil, hemp oil or sunflower oil, extra virgin
Cut all produce to bite size portions, add spices, chill for 15 minutes toss gently with oil and vinegar.
